Could you be a Veganist?

Yesterday Oprah did a show on being a Vegan.  Oprah challenged her whole studio to go vegan for just one week.  She got 378 people to participate... Vegan means - that you can not eat anything that comes from an animal so NO meat, No eggs, No milk, no fish...
Oprah's staff all raved about how great they felt after completing the challenge... just one week and they could really tell a difference in their energy levels, digestive systems, and many of them lost a significant amount of weight... and it was only 7 days!!!
I became interested in this way of eating... I know that it is not realistic to become a vegan, much less a vegetarian all of the sudden, but I did find that there are some really good meat substitutes - if for no other reason you should try them just to add some variety into your cooking! Lets be honest chicken breast gets old!
I decided while James was out of town to experiment with Tofurkey Gourmet Sausages.  Tofurkey
Yesterday I had learned that this sausage was quite tasty with pasta and marinara sauce.  I added some peppers and onions to my tomato basil sauce - it was DELISH!!!
saute sausage, peppers, and onions

serve over pasta! and enjoy!
pour in the tomato basil sauce - or whatever type of sauce you prefer
